fill’er up: cinnamon oatmeal waffles

I can’t believe it’s been over a year since I’ve posted a waffle recipe. Believe me, this is the perfect waffle recipe after a long waffle-absence because it will only take one to fill you up. Really. This waffle is hearty. I spied the recipe on the very lovely Shutterbean’s site (who originally found the recipe in Sunset magazine) and knew that this would be the waffle recipe to get me back on the waffle train. Enjoy!

    This looks amazing! as do the apples right below…in my younger/less cooking years had I realized apples were for more than biting into raw, many a wasted produce would have been saved.

    I grew up eating frozen Eggos and frozen waffles as a kid and Aunt Jemima maple-flavoured syrup…eww. I no longer eat frozen waffles but I don’t get to eat real waffles either because *sniff* I don’t have a waffle maker. I bought one for my brother’s family last year for Christmas but neglected to get myself one. I know that they aren’t really expensive, it’s jut one of those things you’ve always wanted but never saw it as a priority, until you see a post about waffles and say…ohhh, waffles!! Yummm!!

    The recipe sounds delicious. When I first glanced at this post, I too thought the first photo looks like the windows of a skyscraper.

    Now I really need a waffle iron.

    I’m without a waffle iron at the moment so I’m going to have to modify this a bit because this recipe sounds fabulous. And I have a huge container of real maple syrup that I received as a gift from my aunt in Vermont. (we won’t get into canadian vs. vermont right now!)
    Looks hearty, healthy, and yummy.

    Made some substitutions (2c. buttermilk instead of yogurt and milk, omitted flax, added another T of br. sugar). Delicious. So hearty!

    Sara, I totally think you could make muffins with the leftover batter! I just made the waffles and then heated them up in the toaster when I wanted breakfast. But the muffin idea, I think it would work. Let me know how it goes!

    I actually didn’t have any leftover batter from this batch -I made all the waffles, for freezer and toaster oven. I didn’t mean literally the same batter, just same recipe, and wondered if I could make it and cook it in muffin pan (I don’t know why…just because?). Then I got to thinking of the waffle iron as just another way to cook batter, any batter, and it could be nice during hot weather to use instead of the oven, and now I wonder about savory waffles. Like if I could take this recipe and make it into muffins, could I take a corn muffin recipe and cook it on the waffle iron? One wonders. Well, I wonder…

    Stuck in the house on a snow day, I had to make these4. Yummers! The batter didn’t exactly “pour” onto the waffle iron, more like I had to scoop and plop it, but they came out great and I am still enjoying the extras that went into the freezer. Just one of these fat boys and I’m good to go! Thanks for the recipe.

    Hi all, I made the waffles over the weekend and they were really tasty but I had to add extra milk – about a 1/2 cup more. The batter was just too thick before adding it. Did anyone else have this issue. Thanks K

    anon, the batter is thick. you can definitely add more milk if you feel the need!

    I loved these so much I made them again pretty much after my first batch ran out. I replaced the yogurt/milk combo with buttermilk, b/c I had some to use up. These are just so good, and so healthy. I like to have half of one with a small piece of sharp cheese and a piece of fruit – lunch! Because of the shape, they thaw out fast and are good just room temp and untoasted. Half of one of these is also good as the toast in the peanut butter toast I like to have for breakfast with coffee and a banana. It’s just a great thing to have in the freezer.
