breakfast cake! maple breakfast cake

Who loves cake for breakfast? I do! I do!! I saw One Whole Clove had Maple Syrup Tea Loaves on her site and I decided that I had to try out this loaf recipe. It didn’t have any eggs to fuss with and it would be a very simple recipe to make vegan — just substitute the milk for soy and the butter for vegetable oil or Earth Balance. I didn’t have any soy milk and I only had half the amount of milk, so I added some plain yogurt to make up most of the milk portion. The cake turned out lovely and I could definitely eat this cake for breakfast, lunch or supper!

    Ah, my comment dissappeared. I was wondering how you got that darker color, because mine came out really pale. Tasted like a pancake though quite good, quite good.

    Did you Use Wheat Flour?

    ack! sorry, i had 2 posting of the same entry & i accidentally removed the one with the most comments. oops! in answer to your question, no, i used white ap flour. it prolly came out darker because it took so long to bake. our oven is really old and i always have to compensate for it.

    I actually had issues with my oven as well, but it came out quite dense(I mixed it like a muffin actually) but it only needed to bake about 35 minutes on the recommended temperature. *kicks GE oven of doom*

    My Vancouver Oven was sideways though, and things would roll in it because of my uneven floor…so I can’t complain.

    I stumbled across your site yesterday, by magic I think, and decided to make the breakfast cake. (My husband is what I politely call “addicted to maple products”!)

    It was quite literally the easiest cake I’ve ever made! I followed the directions and 45 minutes on 350 later, it emerged looking and tasting perfect. That NEVER happens in my oven. Ever.

    The pancake taste/texture was strange for about 3 seconds before both of us couldn’t get enough. We ate *almost* an entire loaf last night! Eeeeeee!

    I found your recipe awhile ago while perusing your motivating blog (motivating in that it makes me want to get off my bum and try out yummy new recipes) and had had it bookmarked for some time. Finally tried it out this morning and it’s great. I love the fact that all the ingredients are things I always have on hand. BTW, it was extra delicious with strawberry-cranberry jam spread on top.
