pumpkin & pecan pancakes


So I’m giving the deuces to the pumpkin in my freezer. I don’t really know what giving the deuces means, other than that I saw Whitney on this past episode of America’s Next Top Model “give the deuces” and man, that is totally going into my social hand-sign repertoire. So deuces to pumpkin puree which means the other day i made cake, and now I’ve moved on to pancakes. But instead of going the plain jane route, I threw some pumpkin into the mix and oh! my!, what a fantastic breakfast! The pancakes were unbelievably light and fluffy and the pumpkin flavour worked so well with maple syrup. For added crunch I tossed some pecans into the batter and it was a perfect compliment. Of course with all pancake recipes, we always end up making too much. But don’t worry if you have too many pancakes that you can handle on a Sunday morning, these babies taste great toasted in the toaster on Monday….and what’s more perfect for a quick weekday breakfast than pancakes?! Leftovers never looked or tasted so good.

    Leftovers rock!!

    I doubled your meatloaf recipe when I made meatloaf on Saturday and have been eating meatloaf all weekend.

    Served with mashed potatoes and steamed Edamame – I’m not complaining about leftover meatloaf – no siree bub!

    And I wouldn’t complain about leftover pancakes either especially when they are this tasty sounding.

    Pumpkin and pecans put the “cake” into pancakes.

    These pancakes sound excellent! If you don’t have a freezerful of pumpkin puree, can you use canned pumpkin instead?

    joanne, i agree these pancakes definitely put the cake into pancakes!

    terry b: definitely use canned pumpkin…but make sure you don’t use pumpkin pie filling which is filled with sugar and spices and probably lots of bad things!

    I tell myself I can’t print out any new recipes until I make a dent in my current recipe stash and my new “Jamie’s Italy” book. Then I read this blog.

    I’m already making baked beans and beer bread for my boyfriend tomorrow, now I think he’s getting pancakes on Wednesday.

    yes please!!! I don’t like pumpkin pie, but i am slowly learning there is more than pie out there. i made a pasta sauce with pumpkin and wow! can’t wait to try these pancakes.

    MMMM! My boyfriend and I have started a Saturday morning pancakes tradition and this looks like it’s up next!

    I’m going to second terry b’s question… I don’t have a freezerful of pumpkin puree either….. 🙂

    Hey, the beans and bread were excellent. We were both completely enamoured of them, and they will be getting cooked again for sure.

    The pancakes weren’t such a success, due to me forgetting the milk until I’d burned the first batch, but they were still ok.

    I know this is an old post, but I just found it and made these today. They were so incredibly light and fluffy. For our personal tastes, I will probably add more spices next time, but overall they were excellent. =)
