oh so pretty: chocolate mint slice & bake cookies

After seeing these beauties on the baker’s rack, I had to give them a go. They just looked so pretty and festive and the colourful nonpareils looked like twinkly Christmas lights. I had all the ingredients, so last night at one in the morning, I mixed up a batch. This morning I got up at 8am and sliced up the cookie logs and baked them. I wasn’t pleased with the results – the chocolate ones weren’t very chocolately and the mint ones weren’t too minty. I haven’t made slice and bake cookies since I was a wee youngin’ and I don’t think I’ll make refrigerator cookies again as these were too much work for one in the morning. But don’t they look pretty??? Yes, they do and I’m taking them to my bowling party pot-luck tonight.

    Sometimes with holiday cookies, it’s all in the presentation, I say! They’re gorgeous.

    I say make them agian but add some extra chocolate extract and mint extract next time. They are too pretty to give up on, LOL!

    My vote’s with Michele! And it’s funny, I saw these on Baking Sheet too and thought she said that the chocolate ones were too chocolatey? SCANNING of course so who knows …

    ak, maybe I somehow goofed up the recipe (it did require many steps and it was late in the night when I did make them!)

    I think mine came out a little minty because after reading your post I went and looked at the bottle of extract that I used and it wasn’t peppermint it was just pure mint extract. Like spearmint. Sorry they didn’t come out well. Happy Holidays!

    Michelle, I think I was a bit stingy with the mint because last time I had used it, I used too much so I think I was pouring with a light hand! They are the most beautiful cookies tho 🙂
