bakery hack: smart cookies


One of my favorite cookies is the Power Cookie sold at Capers Markets around town. It’s freaking delicious and it’s filled with all kinds of nuts and seeds and other good things. After devouring one quickly on the street, I decided to head home and see if I could recreate the cookie on my own. It turned out I did a pretty good job hacking out what I thought went into each bite. Unfortunately, I don’t have a photo, as I made these cookies as a gift and mailed them out before I had a chance to start snapping. I hope my drawing of these 100% vegan treats will convince you that this recipe really is fantastic!

The cookies are filling and with all of that good stuff crammed in, I certainly wouldn’t be adverse to calling these a breakfast cookie! While the ingredient list is long, these are simple to put together and they bake up really well too. If you don’t have applesauce on hand, but you do have an apple, just make your own sauce. One large apple should do it.

These cookies aren’t cakey or crisp but they are definitely chewy and hearty. Don’t worry about the chocolate messing up your healthy eating plans, cuz after all, isn’t chocolate good for you? I think so.

    Oh I love cookies that are barely held together with the tiniest bit of flour. We have a place that has a cookie that is about 70% coconut and 20% chocolate and nuts. It is so good. Will have to try your version.

    These cookies sound great and just what my husband likes to eat as he is both a fan of the Capers Market and of healthier food choices.

    Capers also has a power muffin which apparently ‘rocks’ according to hubby!

    I made these cookies tonight and they turned out even better than I anticipated. They are still warm from the oven and the chocolate is all melty. I was a bit worried at first while I was making my cookies…err…patties because I thought to myself there is no way that these will hold together in the oven, but they did(!) and even when I removed them from the baking sheet with the spatula they remained intact…perfect through and through. Excuse me now while I go to the kitchen for another “cookie patty” LOL

    Just made these, and had to say thanks for yet another great vegan recipe! (even though am not even mildly a vegetarian, I love the idea of baking without needing animal products) I used sour cherries instead of applesauce (inspired by your post-Europe posts), totally forgot the vanilla, and added a little ground ginger. Yum!
    And although this makes absolutely no sense whatsoever- they were a tad on the sweet side for me. Will try with half as much brown sugar next time.

    Must go while the cookies are still warm and the milk is still cold!

    WOW. I made these cookies last night and they turned out so awesome and delicious. I really like the intriguing dimension of flavor that the sesame seeds give them.     Just made these and they are very good! However, i made half the batch as granola bars b/c because the taste and texture reminded me of a bar rather than a cookie. Great recipe!

    I love these. I was hoping that based on the ingredient list they would be much like the whole foods deli power cookies…and they are!

    I made a few alterations:
    I used agave instead of maple syrup.
    I used half cherries and half raisins
    I used half sesame and half pumpkin seeds (based on the fact that the whole foods version that I love has visible pumpkin and sunflower seeds)
    I threw in an egg because the pre-baking consistency totally freaked me out. After reading other feedback, I should have resisted the urge, but they turned out great, still.

    I ate two, my two year old LOVES them, and I am taking them to my boyfriend's rugby game for the boys…we'll see how they go over! Just a sidenote, these were WAY fun to make with my son, since there are SO many things to measure and pour. Thanks, oh and like everyone else on here, love the adorable drawing.

    Just stumbled upon this recipe looking for a Whole Foods Coco Orb recipe, and decided to make these instead. I distributed them amongst my friends and everyone loved them. The only adjustment I made was subbing sunflower & pumpkin seeds for the raisins, but I would say they’re even better than the original power cookies. I can’t wait to do some experimenting with this recipe, next up will be a banana peanut butter version πŸ™‚
