canada day muffins! berry smash muffins


Happy Canada Day! I’ve been up early getting started so that I can relax before our friends arrive for a little Canada Day bbq and fireworks watching from our balcony. I’ve got a mixed bean salad marinating in the fridge, 2 different kinds of ice cream (coconut chocolate chip & mexican chocolate) ready to start churning (we do it old school in our teal Ice Queen), and another salad that will involve potatoes, cukes and dill. Plus, our fridge is full of beer and I’ve got tonic water & club soda to marry with the gin for some icy cocktails. I love holidays!

I also love breakfast and I’m sitting here with coffee in my hand realizing that I’ve had nothing to eat yet today and it’s already 1pm. Oops! I should have been more prepared. I should have made some muffins. More importantly, I should have made a batch of Berry Smash muffins. I made some earlier in the week and they were simple to make….I whipped up the batter the night before, poured the mixture into muffin tins and put it into the fridge. The next morning I woke up, popped it into the oven and 15 minutes later sat down to fresh, delicious strawberry muffins. Damn, I wish I had that same forethought last night!

    Oh what a great idea!! We were so unprepared this long weekend to plan anything special for Canada Day….boooo 🙂

    I just got home from phutzing around the neighbourhood. I met up with a friend for lunch at Fresh (local vegetarian/vegan resto), inquired about flight fares at a travel agency for our September trip to Greece; browsed through a local bookstore and picked up two inexpensive books (one was for $5!!), had some tea at a local coffee shop and popped into a Korean supermarket to get some fresh salmon and other Korean savouries.

    Not very Canadian of me, eh?

    Yesterday, I went shopping for some new work clothes to be worn during heat waves (we’ve had a few thus far). I’ve also made progress on designing new bling for the craft show next weekend.

    So you see, all-in-all a relatively un-Canada Day weekend.

    However, I do love barbeques especially because of the great salads people whip up. And ice cream – you can’t go wrong with freshly churned homemade ice-cream *sigh* – the coconut chocolate chip one sounds so awesome…mmmmmmm.

    Wow! Freshly baked muffins with fresh strawberries that were picked by you. Such a wonderful way to enjoy summer fruits and feel good about it too!

    happy canada day! looks like you’ve found delicious way to celebrate . . . i don’t live far from canada myself and have been hearing the fireworks all night!

    What a great way to celebrate Canada Day with fresh strawberry muffins for breakfast…the BBQ sounds perfect as well. Our fireworks were cancelled last night “due to technical difficulties”, but there was still plenty of revelry for Canada’s 140th birthday party!!!

    wow, those look pretty tasty. i would definitely look into creating veganized version to enjoy for myself. i even love the pretty contrast of the pink and white.

    WellUnderstood, I love fireworks and this was the first year in a long time that Vancouver had fireworks for Canada Day! Exciting! We watched them on our balcony.

    Thanks for the delicious recipe. I actually adapted it for Independence Day in the States by adding some blueberries left over from my Red White and Blue Sundaes. The muffins are awesome. Even my Canadian friend likes them. Thanks!

    i saw those muffins posted on dine and dish before. i didn’t realize how insanely easy they were though. do they get moist/gooey tops the next day because of the fruit?

    eatme_delicious, the tops on these don’t get mushy! they lasted 2 days only but were still delicious the next day.

    I made a gluten-free version of these and they turned out fabulous! I added a butter/sugar topping before popping them in the oven to make them extra-yummy and I’ve managed to devour 3 in the first half-hour after they came out of the oven!

    I used this recipe and subbed blueberries (unsmashed), ww flour, and baked in a rectangular pan (I have no idea the dimensions). So yummy! Can’t wait to have some with coffee in the morning!

    I make these with half whole wheat flour, mushed banana instead of the egg and then reduce the sugar slightly (because the banana makes it sweeter!) and they are really delicious. Thanks for the recipe; your blog is really great!
