raspberry drop scones

TGIF. Really, it’s been one of those weeks. Tons of work, a big flare up of repetitive stress injury and I haven’t worked out in ages. All of this means that I haven’t gone grocery shopping in days and for someone who walks to the local market every day or two, things are not looking good fridge-wise. And just to add insult to injury (why not?), I made a pound cake on Sunday that is still sitting in it’s pretty glass cake dome because it just tastes too yammy. Yup, a cake I made 5 days ago is still available for eating when things get desperate. I’m in a slump and I’ve got to shake it up.

One thing that I do have going for me is a freezer full of summer berries. It’s a nice surprise to pull out a plastic container filled with strawberries, raspberries, blueberries or blackberries in the middle of winter (or the beginning of March that feels like the middle of winter). So I made these raspberry drop scones for breakfast a few weekends ago when I was sans slumping. They’re not very sweet and they’re easy to whip up for breakfast so it makes a perfect little pick-me-up breakfast treat. I think I could use another batch for Saturday morning.

    you know I’ve been eyeing the raspberry scones at starbucks for a while, waiting for the urge to kick in and make my own.
    I love yours and I hope to make some very soon. I want them sweeter, so just add in more sugar and maybe buttermilk instead of skim. Hope your weekend is better. I haven’t been to the gym in 1.5 weeks and I’m hating myself for it.

    I seriously fixated on the line “walks to the local market” for a while, completely jealous and imagining such a life. Sigh. Anyway – raspberries are one of my favorites, so I love them in any baked thing (well, except for an unfortunate buttermilk cake I made last year). Beautiful photos, too!

    Sorry things have been stinky lately! Hopefully they will turn around and you can have some time to relax this weekend. And I’ve never heard of drop scone before – so much better than cutting them out into perfect shapes!

    Thanks kickpleat, You just gave me an idea! I too have frozen raspberries from last summers berry picking in my parents backyard. I totally forgot about them. What I don’t have in stock is raw sugar. How necessary is this ingredient?
    Yam cake? Hm, sounds kind of tempting…in a healthy way. What if you slice it and toast it in a toaster and have it with jam/butter/peanut butter or figure out a way to make it into bread pudding or french toast?

    Sounds good–I love a nice, not-too-sweet scone! kickpleat, do you thaw the berries first or just crumble them up while frozen? I’ve never made scones using frozen fruit before.

    I love drop scones! In my mind, there’s absolutely no reason why scones should require rolling-out, when perfectly delicious drop scones can be prepared.

    I have raspberries in my freezer, as well. I might have to try out these scones.

    YUM! I just made these, and I almost feel better about discovering today that two jobs I was hoping to get went to somebody else. Actually, if I make some lemon curd to go with them, I might be completely over it 😛

    have some blueberries i would like to put into a scone and this sounds perfect! which would be better? this or your blackberry scone recipe? what are the differences in texture? keeping time? deliciousness? and do you use unsalted or salted butter? thanks

    Lena, this is a good scone recipe for blueberries & all my scone recipes are very delicious 🙂 I usually use unsalted butter, but if you use salted you may (or may not) want to leave out some or all of the salt.
