elsewhere, peanut noodle vegetable soup

I was going to post this recipe right here, but then I got an email last week from Michelle from Thursday Night Smackdown looking for some much needed guest posters for her own food blog. She needed a mental health break and so I plucked the post from my soon-to-be published roster here and dropped it over there. So check out her blog and check out my recipe for a vegan peanut noodle vegetable soup. Trust me, it ain’t pretty, but it’s so very very delicious.

    Just so you know, I think the soup is gorgeous. I love everything in it and can just taste it’s deliciousness. That is beauty. 🙂

    one night i thought my roommate was storing a tupperware container of barf in the refrigerator, but then i realized that it was actually this soup, haha! it is really really good, though.

    I love peanut butter in expected places. I made a spicy peanut sauce last week that I put on top of roasted sweet potatoes and rice in a burrito. So yummy!

    There’s also this restaurant here in Toronto that serves peanut butter on hamburgers. For real. It’s soooooo good, trust me!

    But the best is putting a little peanut butter, soy sauce and siracha in a bowl of ramen. Guilty, guilty heaven.

    Ooo delicious. I’m keeping this recipe on hand when I have a bunch of veggies to use up. I love peanut butter in savoury stuff!

    I love peanuts in curry sauce, and have had a good spicy peanut noodle soup, so yes, this is tasty looking!

    update: I made this and it rocks! I had to use the veggies that I had on hand like mushrooms, red peppers and carrots. The broth is what really wowed me! It only took less than 40 minutes to whip this up!

    i am in awe of the new site! it’s SO much easier to flip thru recipes — this was the first one i wanted to pull.

    we *love* this in our house…and i have passed this along to no fewer than 10 ppl, from Portland to Phoenix to Chicago to northern MI — this “soup” is such a hit.
