rainy day breakfast: potato & ham frittata


I awoke this morning to the sound of rain and i pulled up my comforter tight around my face while I reached around the floor for my book to help me stay cozy for a bit longer. When I finally did get out of bed, I already had our breakfast planned. A potato, black forest ham and egg frittata. Pure comfort and joy with just the right amount of heat from the oven to counteract with the slightly cool air coming in from the open kitchen window. Morning perfection with a cup of strong, milky coffee.

    Oh my god, what a fantastic rainy day breakfast that is! The kind that leaves you full, warm and very very happy 😀 Since our spring season is usually quite wet, I’ll have to give this a try!

    Hey…what a coincidence! I had an egg dish today too! Not nearly as good as your frittata though. I had an omelette with plenty of veggies for dinner. Would have liked to have added cheese to it but my Naturopath doctor put me on an elimination diet for a month…so no dairy, wheat, yeast, caffeine, alcohol, etc, for a while…:(

    Potato, egg, bacon whatever…it is the perfect rainy day food! It has been so long since we have had a rainy day…a long deserved dish! Perfect with coffee, and perfect tommorow AM with Coronation Street!

    Ellie, it was the most perfect comforting breakfast. I think it would make a lovely rainy day supper too.

    I´m longing for autum weather to start. That won´t be for another month, at least. But the fritata sounds good for a dinner with salad.

    Oh my. Egg, potato, ham, cast iron skillet. Sounds like the perfect rainy day breakfast. If by “rainy” you mean “hung”, and by “day” you mean “over”… I’m keeping this one on my fridge for the next rainy day!
