can’t stop, won’t stop: double chocolate oatmeal cookies

I can’t stop snacking on these cookies! Usually, I’m not much into double chocolate cookies, but these are just too good and I should have doubled the recipe. They are easy to make and twelve cookies the recipe makes just isn’t enough. Make them now and send me your gifts of thanks after you’ve licked off all the crumbs.

    I followed this link from your post yesterday and literally, without hesitation went to the kitchen to bake me some. They are yummy and such a nice change from my standard chocolate chip cookie recipe.

    I made a batch of these while watching the AFC championship game this afternoon.
    They were so easy to make but so sinfully decadent. YUM! I added 2 Tbsp shredded coconut…because chocolate and coconut are one of my favourite combos of all time 🙂
    Thanks for this great recipe! Then I made a batch of your 10 minute pizza dough…topped it with pesto, onions, spinach, mushrooms and gruyere cheese…and we had a feast during the NFC championship game a few hours later. So good…

    Hi Tania, no, I think using oil would not make the cookies set up properly – they’d go too flat in the oven and might be a bit of a mess.

    Tania, If you have coconut oil – in its solid state (not melted) you “could” try that, but that would be my only suggestion – other than buying more butter or margarine. Good luck!

    Yes, Bambie, it really is just 2 tablespoons of oats. This recipe doesn’t make a huge amount, but it’s very good.
