headache for two: simple sopa de conchas

Yesterday both Cornelius and I had splitting headaches. I think it was due to our lack of caffine (we ran out and were too lazy to get more). By dinnertime, we both couldn’t get off the couch but we realized that we couldn’t survive on Gilmore Girl repeats alone. We needed something quick and simple and then I remembered Crystal‘s package and the small packets of Mexican macaroni. She taped a short recipe to the package and a simple and satisfying dinner for two was born.

Next Day:

Yes, dinner was another lazy meal and I took the above recipe and expanded it. It turned out fabulous. I sauteed bacon until crisp and added chopped garlic and onion, and followed the rest of the recipe. Five minutes before the meal was ready, I added some chopped broccoli to the mix for a bit of green. Tasty!

    yes, i’m totally addicted.

    it’s funny because i only started watching the show a couple of months ago and now i’m totally hooked. cornelius has been bringing me the dvds from the library so i’m catching up on all the old episodes.

    You know I never made this recipe and I love mexican pasta dishes. I am going to have to make it this weekend. I have so many recipes that my sis has posted that I want to try, but in this house the eaters are too picky. If they have never had it before, it will probably just sit there. One of these days I am just going to make it and say eat it or else no dinner for you!

    michelle, this is a fantastic recipe! first off, it’s EASY! and more importantly, it tastes great! you really can add whatever you (and your family!) likes best. i’d definitely give this one a try!

    I’m so glad you liked the pasta! There are so many different ways to make sopa…one for every cook, I guess! To use my husband’s term, it’s Mexellent! 🙂
