ginger whole wheat scones

It seems most of my posts lately are steeped in breakfast…waffles, fruit oat bars, muffins. Well, add these scones to the list because I just don’t tire of eating breakfast. I know there are people out there who don’t eat breakfast, but not me. It’s probably my most favorite meal of the day.

As for scones, I’m pretty smitten. The very first scones I made were from Orangette and I’ve since adapted and tweaked her recipe into something that I use quite often. The first time I made scones, I was nervous. It seemed much more of an endeavor because the recipe directions included a word I feared: kneading. I don’t know why because it all seems kind of silly now. Kneading is nothing more than getting real familiar with dough. It also just feels right to have the dough come together with your own two hands. Scones are easy to prepare and I can whip up a batch in under 30 minutes, including bake time. Never made scones before? Well, you are missing out on something wonderful.

I’m no stranger to the inclusion of ginger in a scone. I’ve made a vegan ginger pear scone and a simple ginger vanilla one. I think it’s my favorite flavouring because it not only adds a flavour pop but using candied ginger gives the scone great texture and sweetness. The other morning I decided to try adding whole wheat flour and yogurt instead of milk and the results were great. I think the yogurt helped to provide some lightness against the heavy whole wheat flour. Next time I’d like to try removing 1/4 or even 1/2 cup of the flour with some wheat germ just to try something different.

Elsewhere: Over at Poppytalk I’m dreaming of local berries but have to make do with some winter citrus. So I make a fruit salad with blood oranges & grapefruit. And ginger. It’s juicy, spicy and a great way to wake up. See, more breakfast posts – what did I tell ya.

    you make as many sweet delights as your heart desires….i for one, cannot get enough of them.
    scones i adore, and haven’t had for a while because i’m not eating fattening foods (i give most of my stuff away). but to be honest, i’ve never made a scone w/ yogurt, i know one would think i had, but nope. so you’ve inspired me. 🙂

    So delish! I fell in love all over again with scones on the weekend. Actually made ginger-lemon cream scones.
    They were so good, for once they outshone my homemade jam! =)

    I made your ginger-vanilla scones once and ate them all. They were so good! The kneading thing can be a bit intimidating when it comes to doughy recipes simply because things do tend to get sticky and messy, but I’m a survivor 🙂 The use of whole wheat flour is a great alternative to white flour too!

    I’m all about breakfast food also, especially when it consists of scones and muffins and things that I can eat all day long. These look delicious. I LOVE candied ginger.

    I’m a hard core breakfast eater too. I can eat breakfast food anytime of the day and never tire of it. These scones sound right up my ally.

    vanillasugar, scones with yogurt and pretty much similar to the regular ones, so go ahead & make them! And good on you for giving away all your sweets that you bake. I try to do the same.

    Aimee, I’ve never made cream scones because I’m always wary of using high fat cream. I bet they were delicious.

    Bijoux, I think you’d like this twist on the old version. They’re healthier and just as delicious.

    Mmmmmmm…scones. I have a favorite – it is cranberry orange…. I like the idea of candied ginger, I had never thought of adding that to scones. Thanks for such a good idea!

    Ginger is one of my favorite spices. Goes so well with so many kinds of food. Never tried it in scones before. I’m sure they’re delicious!

    I made these last night, and they’re so good. They came out just sweet enough for me — and a lot more tender than I thought they’d be with the WW flour. I usually use a scone recipe that has a cup of cream, so this was a welcome change. 😉

    this is the perfect remedy for my morning sickness…ginger to settle the stomach, whole wheat cause it is healthier, and it is carbs so that is perfect cause that is pretty much the only thing that makes you feel better. I can not wait to make these

    Ooo I am totally trying out these scones!! Though I’m not sure if I’ll add the ginger. I love ginger in savoury stuff but sweet stuff I’m not so sure. Subbing in some wheat germ sounds like an excellent idea!

    I had been thinking about these scones ever since I saw you post them… and I finally made them a couple of nights ago. And they are just so very lovely! I omitted the lemon and ginger, and used 1/2 cup dried chopped blackberries. I was surprised how nicely they rose and how gorgeous they became because my experience with whole wheat scones in the past always ended in kind of flat scones – nothing comparable to scones made with all purpose flour. Thanks so much for sharing these. =) Gingerbread scones!!! That sounds amazing. I think I must try that very soon.

    Hi there, I had some candied ginger and wanted to make some whole grain scones so google helped me find you. I printed out your recipe but midway through got confused when you mentioned the “milk mixture” – and then later the “milk/egg mixture.” There was no milk mentioned in the ingredients. I was unable to moisten everything so I did in fact add some soy milk (and agave nectar since I was afraid they wouldn’t be sweet at all). They turned out fine with those additions, but I wanted to ask if milk had been omitted from the list. Thanks.

    Sherri, thanks so much for noticing that! I’ve just corrected it to reflect the change. It should say “yogurt mixture” instead of milk. No added milk necessary. Glad you liked the scones 🙂
