light & fluffy pancakes with maple apples

This past weekend, Cornelius wanted to go out for pancakes. I wavered. There’s a diner in our neighbourhood that used to have the very best pancakes and good service, but the last couple times the service really was terrible and the pancakes weren’t up to their usual par. So I put my foot down and make pancakes at home. It turned out to be a great option. The pancakes were light and fluffy and the apples simmered in maple syrup that topped the pancakes was liquid gold. They were perfect and they beat out the pancakes from the local diner hands down.

    There is no better pancake topping that syrup apples, that's for sure. I use brown sugar instead of maple syrup.

    I love making pancakes at home instead of going out to a diner. So much more variety. Those maple apples look delicious!

    I did love them! Though, the spouse was asleep when I made them, and once I tasted them I decided not wake him up. I baked some scones afterward to mask the smell, so he never knew. I win.

    Hag, I got them at a farm out in Langley. They are good for eating I think, but they work so well in baking. I also bought some Sundance apples on the same farm trip and those are amazing for eating. Super crisp!
