the apple of my eye: apple-cheddar-bagel snack


I pretty much love to throw apples into anything. I love them in salads, curries, porridge and sandwiches. Granny Smith are my absolute most favorite apple ever so don’t even mention the bland Red/Golden “Delicious” in my company! A “Delicious” is an insult to the apple family with it’s mealy texture, lack of flavour and ornery appearance. I like my apples tart, juicy and crisp and a Granny Smith fits the bill. I’m eating one right now, in fact! It’s nature’s perfect snack. But want to dress up that apple and take it to the next level of awesomeness? Nature may not have born this little baby, but oh my!, it sure makes for the perfect snack/breakfast/lazy dinner. Nothing much to it but some sliced apple, sharp cheese, a little bit of cinnamon honey for sweetness and spice and a sturdy whole wheat bagel as a transportation base. Can’t find cinnamon honey? Then just sprinkle some cinnamon over your honey and call it a day.

    Okay, are sitting down?

    I’m not a big fan of the apple (egads, I know, I know).

    I don’t mind apples in baked desserts like apple pie and apple strudel or just baked apples with cinnamon and brown sugar. But raw…not a fan.

    Occasionally, I will eat the odd raw apple, just to challenge myself but if I had a choice it would be the Macintosh apple – hands down.

    Despite this idiosyncrasy of mine, I think I can handle apple slices in a sandwich with sharp cheddar and other delights.

    I can adapt, ya know.

    You have won my heart! I put super-thin slices of apple in grilled cheese sandwiches, which my husband sees as outright blasphemy. To me, it just fits. Your twist looks yummy.. and how unexpected, to add cinnamon honey! I’ll have to try that.

    On that note I have to share this – one Thanksgiving, I baked the most lovely apple pie.. crispy with cinnamon sugar on top, glowing, puffy, crispy, melty, all the things a good pie should be. And of course, provided as the condiment of choice – a tub of Imperial Cheese, the super-sharp cheddar that comes in spreadable (sort-of) tubs. I know it’s not the most high-brow of cheese, but it’s what you have with apple pie.

    Almost all my guests passed on the cheese, totally aghast! My husband went digging in our freezer in desperation and brought to the table a 6-month-old tub of Rolo ice cream. Yes, that’s right – no-name chocolate ice cream with whole rolo pieces and marshmellow and god knows what else.

    And. They. Put. It. On. My. Pie.

    I didn’t sleep for a week. I broke out in hives. I … exaggerate. 🙂 But I am so relieved to know that my ‘pie without cheese is like a kiss without a squeeze’ sentiment is echoed, somewhere!

    this recipe is also delicious with dijon mustard instead of honey. i’ve made it as an appetizer on small toasts.

    OMG I LOVE THIS…Its almost 10pm here and just popping in seeing that pic MAKES ME HUNGRY!!! No bagels in the house, but I’ll find some sort of carb to do!!! I’m off to make this!!! YUMMO 🙂

    I remember when I was a kid seeing people put cheese slices on apple pie, and thinking it was an odd thing to do. Now I know how wonderful cheddar and apple go together. This looks like a wonderful sandwich.

    granny smiths are one of my favorites, too! i sometimes like apple slices in my grilled cheese sandwiches. funny, just like the person above said, when i was little, i used to think the cheddar-apple combo was weird. i’m getting hungry…

    joanne, i’m proud of my apple love because really, i’m not a fan of many fruits! if a fruit is too sweet, i’m not a fan. but give the cheese & apple combo a try!

    sweetsalty kate, that sounds awesome! i put mango chutney in my grill cheese sandwiches. i’ll definitely try apple next time!

    style & pattern, wow, i bet the dijon adds a lovely kick to this sandwich! i’m going to have to try that next time.

    hmmm, not sure if you’d like this marie, but give it a go! it kind of resembles apple pie in flavour with the cinnamon and honey!

    I’ve never much liked apples unless they are cooked into a pie or cake or something like that. I might be tempted to give this a try though…hmm….

    Guess what!!?
    I had an apple last night with a chunk of sharp cheddar cheese. Not bad! I can see myself having it again in the future.

    My husband could not believe that I actually ate a raw apple…he jokingly suggested contacting the local newspaper 😀

    You are a genious of simplicity in cooking! That’s why I keep coming back.
    And I’d fight you on the apple thing. I am a lifetime lover of the golden delicious (although I might agree with you about red delicious).
    Though personally I prefer somthing in a pink lady, or fuji if I’m just going to be snacking. Plus they’re the prettiest.

    Here’s my version which is quite different.
    1 small baguette style roll
    thinly sliced apple, any kind
    slices of brie or camenbert
    celery seed sprinkled on top

    I used to eat these all the time when I was growing up! We would top them with a sprinkling of ground cinnamon, too! Delish!
