The great thing about working from home is that I’ve got cookies in the oven and I’m finishing up an ad for a client all at the very same time. Nice! These cookies are actually Cornelius’ favorite cookies and he talks about them all the time. Since fall is here and I’m enamoured with everything pumpkin, I figured now would be the perfect time to share these beauties!

    These look great! I’m thinking of trying them out tomorrow at the bed and breakfast that I cook for. Do you know about how many cookies the recipe makes?

    Crystal, I honestly can’t think of how many they made since I only have one oven rack, a small oven and bake 1 cookie sheet at a time….but it definitely made quite a bit. My guess would be close to 40 or so.

    Thanks Joe, I’ve got more pumpkin left over so I’m hoping to make something else tommorrow! Maybe even some pumpkin muffins!

    Rachel, these aren’t very pumpkin pie like — texture-wise or taste-wise. try it and see!

    I made these at work yesterday and they were fabulous! I ate 3 of them while I was baking…I’ll be making them at home very soon. Thanks so much for sharing the recipe! Also, I agree…I’d say it makes between 4 and 5 dozen cookies, depending on how big you make them.

    Yum! I made these cookies this weekend and my friends have been thanking me ever since. What a perfect cookie combo. My only recommendation is to use a bit more oatmeal – maybe 1/2 c. more. My cookies were a bit on the soft and squishy side and could have used some additional heft.

    annon, glad you liked the cookies. due to the pumpkin, they are definitely more cake-like than a traditional crisp cookie. maybe baking them a couple minutes longer would give them a firmer texture. they’ve always turned out great for me!

    Oh yum, another delicious looking recipe. I’ve made pumpkin cookies before but was disappointed by how cake-like they were. The addition of oatmeal sounds intriguing though so I want to try these out (though I’m sure they will still be cake-like).

    eatme, if you are looking for a crisp cookie these are NOT it. they are very cake-like, but tasty!

    I made these today in my dorm for a party–they were so good! I didn’t add chocolate chips, and next time I think I want to add molasses. 🙂 Either way, they’re smashing!

    Sounds delish…Putting my version in the oven right now, made with applesauce instead of butter and a one cup less sugar. Also making them into bars rather than cookies. Fingers crossed!

    Mine are finished and not quite what I was hoping. Probably should have used a little butter. Good taste, strange texture.

    These are so yummy! I'm in process of baking them and just tried the first finished cookie. I think they need the whole bag of chocolate chips though 🙂

    Not bad…I increased the cooking time to firm them up just a bit and they were yummy. I also added pecans!
